Spinach Wild Rice
You will need:
5 Cups Chopped Spinach
1 Bunch Chopped Green Onions
1 Cup Dried Sweetened Cranberries
Other Additions if you want:
1 Cup Chopped Celery
1/2 Cup Chopped Smoked Salmon or
1/2 Cup Diced Smoked Turkey Breast
Other Greens such as Arugula, Sprouts or Watercress
Dressing: assemble ingredients and wiz up in food processor, then toss with salad. Enjoy!
2/3 Cup Olive Oil (or any vegetable oil)
1/3 Cup Apple Cider Vinegar
1/4 Cup Chopped Parsley
2 Cloves Garlic
1 Teaspoon Salt and 1 Teaspoon Mustard
