Garlic Scape Pesto

I harvested about 150 garlic scapes. They have a mild garlic smell and I am going to make pesto out of them. This recipe works best with a food processor. Put 10 to 12 Garlic Scapes in the bowl and process them for a minute until they are well chopped up. Add 1/2 cup Nuts ( I use Roasted Walnuts, Sunflower Seeds or Pine Nuts), 1/4 to 1/2 teaspoon Salt, 1/2 to 1 cup Olive Oil and 1/2 to 1 cup Parmesan Cheese ( grated, or in chunks). Process this mixture until it is a creamy mass. Add olive oil if necessary. I store this in small zip lock bags in the freezer and use for pasta and pizza.
