Sweet Potato Au Gratin with Scapes
Last year I planted about 150 garlic bulbs and this year they all came up, ya! Last week I harvested all the scapes (pre garlic flowers) and ground them all up tonight. Ingrid found a recipe she has wanted to do and it goes like this. Slice 2 medium White Potatoes and 1 Sweet Potato. Boil these for about 5 minutes then drain and combine with 1/3 cup Ground Scapes. Toss and set aside. Combine 3 tablespoons Flour and 2 cups Milk with 1/2 teaspoon Salt and Black Pepper in a sauce pan. Simmer for 5 minutes until slightly thickened. Spoon potatoes into baking dish and cover with sauce. Dot with 1 tablespoon Butter. Sprinkle with 1/3 cup Grated Parmesan Cheese. Set oven to 325 degrees F and bake for 20 to 25 minutes. Don't forget to cross some whole Garlic Scapes as a decoration. Enjoy!
