Thai Cucumber

It is cucumber time. English Cucumbers go well with this dish. If you use regular Cucumbers peel off some of the skin. 1 cup Hot Water mixed with 1 cup Natural Sugar and 1 cup Rice Wine Vinegar. Dice 3 English Cucumbers and 1 medium Red Onion. Mix all together with some 1 teaspoon Dried Chili Flakes. Chill in the refrigerator and serve with Chicken Satay and Thai Peanut Sauce with a side of Basmati Rice. This will keep for two weeks in the frigerator.
